I made some chocolate fondant for my family this evening, with vanilla/caramel ice cream underneath, and a chocolate covered cone to keep it all together once you make the whole, so the filling will come out.. Tasted awesome~! :D
Here’s the recipe:
(For 6 persons)
100 g butter
125 g dark chocolate
4 pasteurized egg yolk
4 pasteurized egg white
40 g sugar
20 g wheat flour
Heat up the oven to 220 C.
Melt butter and chopped chocolate at low heat.
Whip egg yolks and sugar together till it’s fluffy and foamy. Then you mix the flour and the now chilled chocolate butter in the mixture.
Whip the egg whites till they’re stiff and airy, and then you very carefully mix it in with the dough.
Prepare some well-oiled (Use butter, NOT oil to prepare the forms) forms and pour the dough into six equally sized forms (I used muffin forms).
Put the forms in the heated oven for 7 min. nothing more, nothing less, the key to keeping them fluent inside is the time.
Then you have chocolate fondant, to be served with either ice cream or whipped cream.. Easy done! Enjoy~! ^^
